We hold the ingredients for our creations to the highest standards. Our bakers use only nutrient-rich, certified organic grains and flour from carefully selected, quality local millers with a commitment to sustainable agriculture and biodiversity. 
Slow Fermentation
The ancestral slow fermentation of our natural sourdough leaven is what gives our artisan breads their characteristic tangy flavour. Sometimes taking up to three days, our process involves the use of wild yeast, which is known to produce superior bread that is healthier, tastier and more easily digested.
